This chilled Mexican Shrimp Cocktail is bright, tangy and refreshing, with cooked shrimp, cucumber, tomato, onion and cilantro in a tomato-based cocktail sauce. It is best served cold and can be enjoyed with a spoon or alongside tortilla chips.

Chilled Mexican Shrimp Cocktail

Ingredients

  • 500 g cooked shrimp, peeled and chopped
  • 1 cup cucumber, diced
  • 1 cup tomato, diced
  • ¼ cup onion, finely chopped
  • ¼ cup cilantro, chopped
  • 1 jalapeño or green chili, finely chopped, optional
  • ½ cup ketchup
  • 1 cup tomato or Clamato-style juice
  • 2 tbsp lemon or lime juice
  • 1 tsp hot sauce, optional
  • Salt and black pepper, to taste
  • Avocado for serving, optional

Instructions

  1. In a large bowl, mix the ketchup, tomato or Clamato-style juice, lemon or lime juice, optional hot sauce, salt and black pepper until smooth.
  2. Add the cooked shrimp, cucumber, tomato, onion, cilantro and jalapeño or green chili if using.
  3. Mix gently until everything is evenly coated.
  4. Chill for 20–30 minutes before serving.
  5. Serve cold in a glass or bowl. Add avocado on top if you have a ripe one.

Recipe Notes

If the ketchup flavor tastes too strong, add a little more tomato or Clamato-style juice and an extra squeeze of lemon or lime to balance the flavor.

Avocado is optional, so the cocktail is still complete without it.
