Maple Saffron Butter Sauce
A glossy sweet-savory butter sauce with fragrant saffron, ginger, lemon and a gentle touch of chili.

This Maple Saffron Butter Sauce is glossy, buttery and fragrant with saffron. Maple syrup and brown sugar give it sweetness, while ginger, lemon and chili flakes balance the sauce with warmth and brightness. I made it especially to serve with lamb chops, but it also works well with grilled chicken and other roasted or grilled meats.
Maple Saffron Butter Sauce
Ingredients
- 3 tbsp maple syrup
- 1½ tbsp brown sugar
- 2 tbsp butter
- 3 tbsp warm water
- 15–18 saffron strands
- ¾ tsp freshly grated ginger
- ¼ tsp chili flakes
- Pinch of black pepper
- Small pinch of salt
- 1½ tsp lemon juice
Instructions
- Soak the saffron strands in 3 tablespoons warm water for 8–10 minutes.
- Melt the butter over low heat.
- Add the freshly grated ginger and cook for about 20 seconds.
- Add the maple syrup, brown sugar, saffron water, chili flakes, black pepper and salt.
- Stir and simmer gently for 2–3 minutes, until the brown sugar dissolves and the sauce looks glossy.
- Turn off the heat and stir in the lemon juice.
- Let the sauce sit for 2–3 minutes. It will thicken slightly as it cools.
Serving Tip
Drizzle the warm sauce over grilled lamb chops just before serving, or serve it on the side as a dipping sauce. The sauce thickens slightly as it cools.
