Buttery Lemony Garlic Mushroom Shrimp Scampi Spaghetti
Ingredients
- 10 oz spaghetti
- 1/2 cup pre-cooked shrimp
- 3 tbsp butter
- 1 cup mushrooms, sliced
- 2 shallots, sliced
- 4 garlic cloves, chopped
- 1 tbsp rice vinegar
- 1 tbsp lemon juice
- 1 tsp dried parsley
- 1/2 tsp crushed black pepper
- 1/2 tsp chili flakes, or to taste
- Salt, to taste
- Chopped green onions, for garnish
Instructions
- Cook the spaghetti. Bring a pot of salted water to a boil. Add the spaghetti and cook for about 7 minutes, or according to the package directions until done to your liking.
- Start the buttery shrimp mixture. While the spaghetti cooks, melt the butter in a large pan. Add the chopped garlic, sliced mushrooms, shallots and pre-cooked shrimp.
- Cook briefly. Cook over high heat for about 2 minutes, stirring frequently so the garlic stays fragrant and the already-cooked shrimp do not overcook.
- Season. Add the dried parsley, crushed black pepper, chili flakes and salt to taste. Toss everything together.
- Add the tangy finish. Pour in the rice vinegar and lemon juice. Stir well and cook for about 2 more minutes.
- Toss with spaghetti. Drain the spaghetti, add it to the pan and toss until the noodles are coated in the buttery lemon-garlic mixture.
- Serve. Dish out immediately and garnish with chopped green onions.
Recipe Tips
Watch the pre-cooked shrimp. Because the shrimp are already cooked, they only need a short time in the hot pan. Longer cooking can make them rubbery.
Use the pasta package as your guide. My spaghetti took about 7 minutes, but different brands and thicknesses can need a little more or less time.
Keep a little pasta water. If the spaghetti feels dry when you toss it with the shrimp mixture, add a small splash of pasta water to loosen the butter sauce.
Adjust the heat. Use 1/2 teaspoon chili flakes for a gentle kick, or add them to taste.
